At Land & Sea, the only thing we take more seriously than freshness is safety.
Detailed tracking records are kept for each lot or meat or seafood we receive, so we know who sold it, where it came from and when it arrived. As soon as a product reaches our facility, it is inspected for quality, temperature and freshness. If the lot was processed before it was shipped to us, it is checked for workmanship.
Whole fish is prepared in-house by our highly trained cutters, each a master craftsman with an average of 25 years of experience. Seafood is processed in a temperature-controlled environment using ozonated water, a powerful organic cleaner that inhibits bacteria growth and prevents cross-contamination. Finally, each product is repacked in ice and stored in a species-specific cooler until it is time for delivery.
Our facility rigidly follows Hazard Analysis & Critical Control Point (HACCP) standards, an FDA program that regulates fresh seafood and holds distributors accountable for product safety and tracking. We also exceed the standards of the Allegheny County Health Department (ACHD), considered by many to be one of the toughest regional health departments in the entire country.
